Roasted Vegetables with Fresh Herbs and Galaxy Balsamic Cream Gold

Spring is officially here, time to fire up those grills and take your vegetables to a whole new level, a GOLD level. 

Galaxy Balsamic Cream Gold is the perfect addition to your veggies. It is a Greek balsamic vinegar made from the finest grapes, creamier than balsamic vinegar, with edible gold flakes. It is meant to dress up any dish, literally. Wow, your guests with its flavour and sparkle!

For this dish we need: 

1 Eggplant 

1 Zucchini

1 Green pepper

1 Red pepper

10-15 Asparagus Spears

1 Onion

1 Tomato

1 Garlic Clove

Fresh Basil, Parsely, or Rosemary (as you prefer)

Agro Creta or Philotimo Extra Virgin Olive Oil

Galaxy Balsamic Cream Gold

(You can vary up the veggies adding more of your favourites)

Chop up the vegetables in slices and place them in a bowl with the finely chopped garlic. Season with salt and pepper, and lightly brush with olive oil. Roast on a grill until soft and brown. As soon as they are ready, serve and garnish with roughly chopped basil and balsamic cream.
